For 4 servings8 chicken portions, skinned
5 tbsp thick natural yogurt
1 egg, beaten
1 garlic cloves, crushed
75 g golden breadcrumbs
2 tbsp sage and onion stuffing mix
1.5 tsp hot chili powder
salt, to taste
75 g butter, melted
parsley sprigs, cucumber and tomato slices, to garnish.
Preparation
1. Heat oven to 180 C. Combine yogurt, egg and garlic in a bowl and mix well together.
2. Put breadcrumbs, stuffing mix, chili powder and salt in a blender or food processor. Process until finely ground. Transfer to a bowl.
3. Dip chicken portions, into yogurt mixture, then coat evenly with crumbs. Coat with melted butter and place in a shallow baking dish. Cook in the oven for 1 hr or until golden. Serve hot or cold, garnished with parsley, cucumber and tomato.
Good serve with: Green beans and jacket potatoes or salad.
