Fast Apple Muffins

For 16 muffins
175 g plain flour
100 g caster suggar
1 1/2 tsp baking powder
pinch of salt
50 g butter
1 egg
75 ml milk
1 cooking apple, peeled, cored and chopped
2 pieces stem ginger, chopped
40 g walnuts, chopped

Preparation
1. Heat oven to 200C (400F). Grease 15-16 deep bun tins. In a bowl, mix together flour,
sugar, baking powder and salt. Rub in butter finely until mixture resembles breadcrumbs.
2. In another bowl, beat together egg and milk. Add to dry ingredientsin bowl and mix together. Stir in apple, ginger and walnuts.
3. Spoon mixture into prepared bun tins. Cook in the oven for 15-20 mins or until lightly golden, well risen and cooked through. Remove from tins and cool on wire racks. Serve warm or cold.
